J. Bruce German, Ph.D.

Dr. J. Bruce German has been a professor in the Department of Food Sciences and Technology at the University of California at Davis for the last 15 years.

His research interests include the role of dietary fat in the structure and function of biological lipids and the mechanism of their oxidation in cells and tissue, essential fatty-acid metabolism, and synthesis and oxidation of bioactive metabolites. Dr. German has published more than 200 papers on fatty-acid structures, metabolites, and functions and has patented the use of fatty-acid isomers of arachidonic acid as immunomodulatory agents. As the holder of the John Kinsella chair he currently leads an active laboratory researching the role of lipids in everything from food functionality to human health and the consequences of evolutionary selection pressure on the components of milk.

Dr. German's extensive research background includes eight years with Cornell University. He also is an active member of several scientific and professional societies including — American Society of Nutrition Science, and the Institute of Food Technologists.

Dr. German holds an HBSc in Biology from the University of Western Ontario, MSc in Plant Biochemistry from the University of Western Ontario and Ph.D. in Food Chemistry from Cornell University.
